30-Minute Shoyu Ramen
A shortcut broth built on stock, soy, mirin and a knob of ginger, with jammy eggs and quick-seared pork. Weeknight ramen that tastes like the real thing.
Ingredients
Tick them off as you go. Quantities are for 2 servings.
Method
BrothSimmer the stock with soy, mirin, ginger and garlic for 15 minutes. Strain.
EggsBoil the eggs 7 minutes, cool in ice water, peel and halve.
PorkSear the pork slices in a hot pan 1 to 2 minutes per side until browned.
NoodlesCook the noodles per the package, usually 2 to 3 minutes. Drain well.
AssembleDivide noodles between two bowls, pour over hot broth, top with pork, egg, scallions and nori. Add chili oil.
