Avocado Toast with Jammy Eggs

The seven-minute egg is the whole trick: set whites, a soft gold center, over smashed avocado on toasted sourdough.

Ingredients

Method

  1. Boil the eggsLower the eggs into boiling water and cook exactly 7 minutes. Move to ice water for 2 minutes, then peel.

  2. ToastToast the sourdough until deeply golden; it needs to hold up under the avocado.

  3. SmashMash the avocado with lemon juice, olive oil and a pinch of salt. Keep it chunky.

  4. AssembleSpread avocado on the toast, halve the eggs and set them on top. Finish with flaky salt, pepper flakes and seasoning.

Test-kitchen tip. For a firmer yolk cook 8 minutes; for runny, 6. Start timing the moment the eggs go in.
