Fluffy Buttermilk Pancakes

Ingredients

Method

  1. DryWhisk the flour, sugar, baking powder, baking soda and salt in a large bowl.

  2. WetWhisk the buttermilk, eggs and melted butter in another bowl.

  3. CombinePour wet into dry and stir until just combined; lumps are fine. Rest 10 minutes.

  4. CookHeat a griddle over medium. Butter lightly, pour ¼-cup rounds, cook until bubbles pop on the surface (2 to 3 minutes), flip and cook 1 minute more.

  5. ServeStack with butter, syrup and berries. Keep finished pancakes warm in a 200°F oven.

Test-kitchen tip. Do not press the pancakes with the spatula after flipping; it knocks out the air you just made.
