Chopped Greek Salad with Lemon Oregano Dressing

Everything cut small so every forkful has tomato, cucumber, feta and olive. No lettuce needed.

Ingredients

Tick them off as you go. Quantities are for 4 servings.

Method

  1. ChopCut all the vegetables to roughly ½-inch pieces so they mix evenly.

  2. DressWhisk the oil, lemon juice, oregano, salt and pepper in the bottom of a large bowl.

  3. TossAdd the vegetables and olives and toss well. Let sit 10 minutes for the flavors to mingle.

  4. FinishFold in the feta gently and serve with warm pita.

Test-kitchen tip. Salt the tomatoes and cucumber first and let them drain 10 minutes for a less watery salad.
