Flourless Chocolate Cake

Method
PrepareHeat the oven to 375°F. Butter a 9-inch springform pan and line the base with parchment.
MeltMelt the chocolate and butter together over low heat, stirring until smooth. Cool 5 minutes.
MixWhisk in the sugar, then the eggs one at a time. Sift in the cocoa and salt and stir until just combined.
BakePour into the pan and bake 30 to 35 minutes, until the center is set but still slightly soft. Cool completely in the pan.
ServeDust with powdered sugar and top with berries. Keeps 4 days, covered, at room temperature.
